Matzo Dishes Your Grandma Doesn’t Make for Passover

  • Julie Resnick Co-founder, feedfeed, a global community of people who love to cook!

What Matzo Passover recipes are trending in the world of home cooks, chefs, and bloggers in the feedfeed community?

Reviewing thousands of submissions on #feedfeed each day from our Instagram community, some pretty amazing flavor combinations bubbled to the top that will take your Grandma’s Passover recipes and turn them on their head!

Passover starts this Friday, April 22nd and with that 8-night holiday comes lots of Matzo! Matzo is unleavened bread made simply with flour and water (and sometimes eggs) and is punched with hundreds of holes to keep it from rising. To me (and I think most!) Matzo is pretty bland. That is until you get creative! So put down the peanut butter or cream cheese and check out the amazing ways the feedfeed community is incorporating Matzo into their home cooking in new and inventive ways!

Matzo Brei Breakfast Sandwich With Ricotta & Sautéed Kale

Who needs bread when you can have Matzo Brei, which is a dish of broken up matzo that has been mixed with eggs and then cooked, resulting in a scrambled egg type concoction, but with slightly more texture. In this rendition, @iwillnoteatoysters creates a batter out the matzo and egg mixture and pan-fries it in oil creating a perfectly crisp vessel for the fried egg, sauteed kale and ricotta cheese breakfast sandwich.

What better way to enjoy Matzo than as S’mores? If making homemade marshmallows is not your thing, consider using store-bought marshmallows or even try filling the matzo brittle squares with ice cream for a frozen treat!

Charoset Ice Cream with Apples, Honey and Walnuts

Ok, so no matzo here, but Charoset ice cream? Where have you been all my life! How good would this be as a matzo ice cream sandwich? For those unfamiliar, Charoset is a mix of apples, walnuts, honey, red wine and cinnamon, and in the story of Passover represents the mortar the Jews used to build bricks while they enslaved in Egypt.

I love this flavor combination! It reminds me of classic baklava, but is much easier to make.

Everyone’s favorite dip in kugel form! The artichokes, spinach and roasted red peppers are a welcome addition to the classic matzo kugel base of this recipe.

Say Cheese

Sometimes, there just isn’t a substitute for a cheesecake. Modesty aside, we happen to think ours is pretty darn good.

Cheesecake | $40 each

We start with freshly ground graham crackers and pecans to make our crust, and add a thick layer of dense, creamy filling with just a touch of orange zest. We sprinkle some of those graham cracker crumbs on top for a perfect finish. It is rustic and elegant at the same time!

If you are a cheesecake lover, (and who isn’t?) you need to serve this one at your next dinner party!
